Olive Oil

:: Approximately 1 000 olive trees are planted on the estate.

:: In 1999, we purchased a mill allowing us to produce and market our own olive oil.

:: Since 2001, a local premise is devoted specifically to the production of olive oil, with stainless steel storage vats.

:: The olive oil is made from a melange of Aglando (25 %), Brun (15 %), Caillon (25 %), Saloninque (10 %), and the remaining 25 % consisting of Tench, Bouteillan, Grossane, Picholine, Cailletier and Lucques olives. This is rather thick yet smooth oil, of the fruity black variety.

:: The harvest generally takes place from November 15th until December 15th and is done by hand. The seed-crushing is done directly after harvesting, and then the extraction is done first cold-pressed by means of a centrifuge.

:: The oil is filtered naturally before being bottled around the middle of February.
