VINIFICATION : harvesting is done by hand, grapes are harvested at optimal maturity, from the 5th to the 20th of September, according to the degree of maturity of the varieties with a rigorous fragmented selection.
Sorting on the sorting table, partial destemming and crushing,must without yeast will ferment in concrete vats between 28°C and 32°C, the tanking lasting over three weeks.
Two daily pumping overs.
Racking in vats (50 hl) for the malolactic fermentation.
Ageing in vats during 18 months.
3 or 4 rackings for aeration and assembling without fining or filtration.
Bottling in June to obtain the most homogeneous lot.

PRESERVATION : Can be drunk after 4 to 5 years, can be laid down 10 to 15 years
